Potatoes fried in olive oil and butter till golden brown and crispy, with sauteed bell peppers and onions.
Ingredients
2½ - 3 pounds Gold/Yellow potatoes, peeled and diced2-6 tablespoons olive oil (Used to saute the potatoes and the bell pepper and onion) may need additional while frying.1-2 tablespoons butter1 cup onion, diced1 cup bell pepper, dicedSalt & Pepper to taste1-2 tablespoon granulated garlic¼ teaspoon Accent MSG (optional)
Instructions
In a large frying pan over medium heat add enough olive oil to coat the bottom of the pan completely, bring to temp and add the better. When the butter has melted add the potatoes to the frying pan and increase the heat temp to medium high. Sautee, stirring frequently (You may need to add some additional olive oil, enough to keep the bottom of the pan moist/glistening).In a separate frying pan at the same over medium heat coat the bottom of the pan completely, add the bell peppers and the onion and saute till desired tenderness. When desired tenderness has been reached, keep warm till potatoes are done.Saute until potatoes are desired tenderness and golden brown. Add onions and bell peppers, season to taste, toss together and serve.
Addition Information
Use whatever your favorite seasoning, such as, Seasoning Salt, Combination of garlic/onion powder, Tony’s Creole Seasoning or just salt and pepper.To increase the amount, add additional potatoes and increase the amount of olive oil used to about 2 tablespoons per additional pound of potatoes and about ¼ cup onions and bell peppers per pound of potatoes.

2½-3 pounds Gold/Yellow potatoes peeled and diced2-4 tablespoons olive oil (May need addition while frying)1-2 tablespoon butterSalt & Pepper to tasteGrated Parmesan Cheese (used to sprinkle over the top of the completed dish) so use to taste.

When the butter has melted add the potatoes to the frying pan and increase the heat temp to medium high. Sautee, stirring frequently (You may need to add some additional olive oil, enough to keep the bottom of the pan moist/glistening). Saute until potatoes are desired tenderness and golden brown. Remove to a serving bowl, salt to taste (While potatoes are still very hot). Just before serving, generously sprinkle with Parmesan or Romano cheese.
